Fresh green mussels with white wine

Green mussels are a NZ specialty and of course as seafood lovers Mathias had to make them. He did this recipe while we were in the Coromandel, so in the perfect setting. It was so delicious we had it 2 nights in a row. Mmmhhhh… just thinking about it already makes me want to have it again!

Ingredients

  • 3 large tomatoes
  • 4 garlic cloves
  • 1,5kg NZ's fresh green mussels
  • 1 large onion
  • some vegetable oil
  • a knob of butter
  • 150ml water

Directions

Step 1 Clean the mussels and make sure you only use completely closed mussels.
Step 2 Chop onion and garlic into fine small pieces. Chop tomatoes into small cubes.
Step 3 Use a big pot that will fit in all mussels later and fry onions and garlic gently with oil and butter. Add chopped tomatoes and salt. Fry gently for another 5 minutes. Then add water. (Water can be replaced with white wine or even beer at any time)
Step 4 Add the mussels and put the lid on the pot. Steam mussels for 10 minutes. Any mussels that did not open up should not be eaten.
Step 5 Serve the mussels hot with fresh baguette to dip into the sauce and a nice white wine to accompany the meal.
