Of course, empanadas make it on our favourites list! Empanadas is the South American version of a cornish pastry to give an easy explanation. And of course, every country here has their own take on it. It is a hand large pastry that comes in many varieties and fillings. It can be fried or oven baked, while we prefer the oven baked version. The most classical is a beef filling, and thus we post this recipe. Really, if you want to get creative, you can create your own fillings as well though.

Ingredients
- 400g flour
- 1 teaspoon salt
- 400g butter
- 2 tablespoons lemon juice
- 300ml cold water
- Filling
- 1 tablespoon butter
- 1 onion
- 1 tomate
- 1kg beef
- 1 cup green olives
- 1 boiled chopped egg
- 0,5 teaspoon sugar
- 50g raisins
- salt, pepper, cumin, paprika to taste
- 1 egg for coating
Note
It tastes better if you make your own dough. If you do not have time or are unsure about it, you can also use ready made pastry dough.
Directions
Step 1 | For the dough: Put in a bowl the flour, fine salt and cold butter, cutting it into pieces with a knife, then add the lemon juice with cold water. Mix all with a wooden spoon. |
Step 2 | Put it onto the table and stretch it with a rolling pin, fold it into 3 sections, stretch again and re-folded into 3, and stretch again. Repeat this at least 6 times. |
Step 3 | Then let it rest in the refrigerator one hour. |
Step 4 | Filling: Fry onion in butter and add the peeled and sliced tomatoes, add the ground beef and cook a few minutes. Remove from heat. |
Step 5 | Then you add the chopped green olives without pits, the chopped egg, sugar, salt, pepper, paprika and cumin as you like. Stir well until all is ready. |
Step 6 | Once the filling is ready, take the dough out of the fridge. Roll it out and stretch it thin and cut out circles of about 12 inches in diameter. |
Step 7 | Put the filling in the middle, leaving enough space free at the edges. Make the dough edges a bit wet. Fold the dough over in the middle so the ends close together. Press the ends together and then fold the edges in a bit. |
Step 8 | Coat with egg and bake for 20 - 25 minutes (or until brown and done) at 180 degrees. |
